Shepherd’s pie with pumpkin

Ingredients:

1 onion chopped
400 g minced meat
1 tbsp. tomato paste
2 tsp Paprika
5 g thyme or 1 sprig
8 potatoes
500 g pumpkin
Grated cheese
Salt
Pepper
Olive oil

Preparation:

Preheat the oven to 220 ° C.

In a frying pan heat the oil and fry the onion.

Add the meat and fry for a few more minutes then add the tomato paste, paprika, thyme sprigs, salt and pepper.

Continue cooking for 5 minutes over low heat.

Peel and wash the potatoes, cut them into the small pieces and cook with the pumpkin flesh in a pressure cooker for 8 minutes.

Drain well and mash into a puree. Add salt and pepper.

In a baking dish, pour the content of the pan, cover with mashed potatoes/pumpkin and cover with grated cheese.

Place in the oven for 15 minutes.
