Ingredients (for 6 persons):
6 chicken legs
6 ripe tomatoes
3 peppers (red, yellow, green)
some chili pepper
1 large onion
3 cloves of garlic
Olive oil
thyme
laurel
Salt and pepper
Preparation
Cut the garlic, onions and peppers into strips and fry in olive oil.
Once the onion becomes translucent, add the tomatoes, cut into cubes.
Add bay leaf, thyme and chili pepper. Add salt and pepper and simmer for about 20 minutes.
Meanwhile in a large saucepan, fry the chicken legs in olive oil on both side. Add them to the sauce when this one is ready and simmer for 15 to 25 minutes.
Eat with rice, noodles or couscous.
