Ingredients (4 servings):
A glug of olive oil
2 whole sea bream
2 large potatoes, washed, sliced very thin
1 small onion cut into rings
1 clove of garlic, sliced thinly
Laurel
Fennel
Saffron
Pastis
Salt
and pepper

Preparation:
Preheat your oven to 180C.
Add a dash of olive oil to a large, oven-proof dish, then in go sliced potatoes, onion, garlic, laurel, fennel, saffron, pastis and some water. Bake in preheated oven at 200°C on the bottom rack for 10 minutes.
Season the fish with salt and pepper and place in the oven dish together with the potatoes. Add more water if necessary and bake for additional 15 minutes.
To check the fish is cooked, stick the handle of a spoon or fork into the thickest part – it should go through easily.
Remove from the oven, and serve family-style, in the middle of the table.
