Meatloaf

Ingredients (6 servings):

900 g ground beef
80 g crushed Ritz crackers
1 egg, beaten
1 cup milk (240 ml)
1/2 cup ketchup (120 ml)
1 small onion, finely chopped
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1/2 cup ketchup (120 ml)
2 tbsp. brown sugar

Instructions:

Preheat oven to 190°C. Coat a loaf pan with cooking spray and set aside.

In a large bowl, combine the ground beef, crackers, egg, milk, ½ cup ketchup, onion, salt, pepper and garlic powder. Mix together with your hands until thoroughly combined.

Pour the mixture into the prepared pan and spread evenly.

Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat.

Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.
