Ingredients:
3 eggs
150 g sugar
200 g flour
2 tablespoons orange flower water (or lemon extract)
8 g baking powder
100 g of melted butter
50 g of milk
Preparation:
Melt the butter in a saucepan over low heat and set aside.
Mix the eggs with the sugar until the mixture whitens. Add the orange water (lemon extract) and 40 g of milk.
Add the flour and the baking powder. Then the butter and the remaining milk; let stand 15 min.
Butter the madeleine molds and pour the preparation in (but not to the top, the madeleines will rise!).
Bake at 240 ° C and lower after 5 min at 200 °C and bake for around 10 more minutes.
Take out of the mold as soon as the baking is finished.
