Bretzel

 

Ingredients (6 bretzeln)

500 g flour
10 g yeast
250 ml water
1 teaspoon salt
½ teaspoon sugar
1 liter water
2 tablespoon baking powder
Rock salt

Preparation

Dissolve the yeast in warm water.

Mix the flour, salt, sugar, yeast and water in a food processor. Form 6 to 8 bretzels out of the dough.

Mix the water with some salt and the baking powder. Warm it up.

Dip the bretzels in the water-baking powder mixture until they float and put them on a non-stick foil or a greased baking sheet (no baking paper). Wear gloves!!!

Slash the dough to a depth of around 1cm in the thick part at the top-back with a sharp knife. Sprinkle with sea salt and leave to rise for about 15 min.

Preheat the oven to 200 degrees (fan oven 180 degrees) and bake the bretzels for 22 to 25 minutes.


With Thermomix:

Put the water and the yeast in the bowl -> 2 Min./37°C/speed 1.

Add the flour, the sugar and the salt -> 2 Min.30 sec./knead function.

Form 6 to 8 bretzels out of the dough.
