Blueberry cream roll

Ingredients (8 servings):

3 eggs
75 g sugar
75 g flour

For the filling:
200 g cream cheese
150 g yoghurt
1/2 tsp vanilla sugar
25 g of powdered sugar
150 g blueberries

Preparation:

Preheat the oven to 210 ° C.

Cover a baking tray (18 x 28 cm) with baking paper.

Beat the eggs and the sugar in a large bowl with a hand mixer for about 5 minutes.

Sift the flour and mix it slowly with a spoon into the egg.

Pour the batter in the prepared baking sheet and spread evenly.

Bake for 7 to 9 min.

Immediately turn the biscuit on a clean kitchen towel, sprinkle the baking paper with cold water and carefully pull it off.

While still hot, roll the biscuit using the kitchen cloth and let it cool down.

Mix the cream cheese, the yoghurt and the vanilla sugar. Put 2 tsp powdered sugar aside, mix the rest into the cheese mixture.

Unroll the biscuit and cover it with the cheese mixture. Distribute blueberries on it. Roll up biscuit again and place on a serving platter. Sprinkle with the remaining 2 tsp powdered sugar.
