Blanquette de poulet

Ingredients (for 4 persons):

1,2 kg chicken (original recipe is with veal)
1 onion stuck with 4 cloves
1 carrot
1 clove of garlic
Thyme
Laurel

For the sauce:

50 g butter
40 g flour
1 egg yolk
Juice of 1/2 lemon
Salt and pepper

 

Preparation:

Cut the chicken in cubes.
In the pressure cooker, put the pieces of chicken, add 1,5 liters of water, onion with cloves, garlic, carrots, thyme, laurel, salt and pepper.
Close the pressure cooker and cook the meat for 20 minutes.
Remove the meat, onion and carrots of the cooker in a bowl.
In a cooking pot, melt the butter, add the flour. Stir for a minute. Slowly add around 1 ½ cup of stock (water used for cooking the meat) while stirring continuously until the sauce has thickened. Add the yolk and the lemon juice. Add salt and pepper if necessary.
Serve with steamed potatoes.
