Ingredients (for 6 persons):
1.2 kg beef
800 g onions
2 tablespoons oil
5 tablespoons
paprika powder (sweet)
2 spoons tomato paste
1 tsp thyme, dried
1 pinch of cumin
3 garlic cloves
2 tablespoons
vinegar (red wine vinegar)
5 tablespoons of water
Salt and pepper
Preparation:
Cut the beef into large cubes.
Peel and cut the onions. Heat oil in a large pot over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.
In a medium bowl, combine paprika, marjoram, thyme, cumin, salt and pepper. Coat beef cubes in spice mixture, and cook in the pot until brown on all sides. Add the vinegar.
Return the onions to the pot, and pour in tomato paste, water and garlic.
Reduce heat to low, cover and simmer, stirring occasionally, 1 to 1 1/2 hour, or until meat is tender.
You can also use a pressure cooker. Cook 30 minutes on low heat.
