Apple Cranberry Crumble with custard

Ingredients (6 servings):

For the crumble
5 large apples
100 g dried cranberries
150-200 g butter
300 g flour
150g brown sugar
6 tsp ground cinnamon

For the custard
3 egg yolk
Vanilla extract
300 ml cream
750ml milk
3 tsp sugar
3 tsp cornstarch

Preparation:

Preheat the oven to 200 degrees.

Peel the apples and cut them into small cubes. Put the apples and the cranberries in an ovenproof dish.

Cut the butter into small pieces and mix it with the flour, the brown sugar and a pinch of cinnamon.

Crumble the mixture over the apples and bake for 30 minutes at 200 degrees in the oven until it is crispy.

For the custard, add the cream, the milk and the vanilla extract in a saucepan and bring to a boil.

In a bowl, mix the egg yolks, the sugar and the cornstarch.

Gently pour the eggs into the hot cream mixture while stirring constantly.

Bring the vanilla custard to boil.

Pass the vanilla custard through a strainer.

Arrange the apple and cranberry crumble on a dessert plate. Pour the vanilla custard around the crumble and serve warm.
