Ham, leek and cheese quiche

 

Ingredients:

Pastry:
250 g flour
100 ml oil
100 ml water
1 pinch of salt

Filling:
2 onions
3 leeks (600 g)
1 teaspoon butter
3 eggs
80g flour
3 tablespoons cream cheese
400 ml milk
grated nutmeg
60 g grated cheese
100 g ham
salt, pepper

Preparation:

In a bowl, pour the flour, oil, water and a pinch of salt.

Mix until you get a ball of dough.

If the dough is too sticky add a little flour; if it is too dry add a little oil or water.

Preheat oven to 190 ° C.

Peel and chop onions. Cut the leeks into thin slices, rinse.

Heat the butter in a frying pan, fry the onions 2 minutes. Add the sliced ​​leek and cook for 15 minutes over low heat while stirring, add 2 to 3 tablespoons of water during cooking so it does not stick.

In a bowl, whisk the eggs, add the flour and mix, add the cream cheese, gradually pour in the milk. Add salt, pepper and nutmeg. Add the cooked leeks, grated cheese and ham cut in small pieces. Mix well.

Roll out the pastry and put it into a tart tin, Pour the mixture into it and bake for 35 minutes until the top is nicely brown.

Serve warm or hot.
