Custard

Ingredients :

500 ml milk
125 g sugar
50 g flour
2 eggs
1 vanilla bean split (1 teaspoon of vanilla extract or 1 sachet vanilla sugar)

Preparation:

Heat the milk with half of the sugar over low heat, stirring to avoid burning the bottom of the pan.

In a bowl mix the flour and the remaining sugar. Add the eggs and whisk until the mixture is almost white.

Pour the hot milk gradually into the flour, stirring. Whisk everything together to have a homogeneous mixture.

Once this is achieved, pour back into the saucepan.

Return to low heat and stir with a whisk or a wooden spoon to thicken the cream for about 10 minutes at least.

Do not stop stirring during this step.

Pour immediately in a bowl, let cool thoroughly.

After that you can cover with cellophane paper on top to prevent a crust to form.

Refrigerate while preparing the pie or cake.
