Cod Italian style

Ingredients:

450 g cod fillets
450 g canned tomatoes
olives
2 onions
2 cloves garlic
parsley
150 ml dry white wine
salt
pepper

 

Preparation:

Peel and finely chop the garlic and the onions.

Chop the parsley.

In a saucepan, sauté the onion and the garlic in olive oil until golden.

Add the tomatoes, olives, parsley and wine.

Simmer for 10 minutes.

Add the cod to the Tomato sauce and simmer again for 5 min, until the fish is white.

Season with salt and pepper.

Serve warm with potatoes or rice.
