Carrot and Tuna Salad

 

Ingredients (Serves 4):

200g carrots
1/4 onion, finely minced
1 tsp finely minced garlic
1 tbsp vegetable oil
1 small, canned tuna

Dressing;
2 tbsp white wine vinegar
1 tbsp grain mustard
Salt and pepper – to taste
Light soy sauce – to taste

Preparation:

Peel the carrot and shred it into 5-6cm strips.

Put them in a microwave bowl and mix in the minced onion, garlic and oil.

Cover loosely with plastic wrap and microwave for 1- 1 1/2 minutes (600W).

Remove the carrots from the microwave and take off the wrap. Mix it slightly. Add the drained tuna and then the dressing (vinegar, mustard, salt, pepper and light soy sauce) and mix together well.

Cool it in the refrigerator. This allows dressing to seep in.
