Ingredients:
400 g flour
1/2 cube of fresh yeast (20g about) or a packet of dry yeast
1 tsp sugar
1.5 tsp salt
220ml lukewarm warm water
1 tbsp melted butter
50g baking soda
coarse sea salt
Preparation:
Preheat the oven to 200 °C.
Dissolve the yeast in the lukewarm water together with the teaspoon of sugar.
In a bowl, mix the flour and the salt. Add the water with the yeast, the melted butter and knead the dough for 5 minutes.
Cut the dough in (8-10) portions and bring it to the desired form (buns, twists, long buns…).
For the pretzel muffins cut the dough into 12 pieces and form balls.
Prepare a pot with 1 liter of water, add the baking soda. Bring it to a boil and then remove from heat.
Plunge the dough pieces into the warm water and let them in it for 5-10 seconds. With a skimmer take them out and put them on a baking paper (no silicon). For the muffins put them into a muffins tray.
Slash with a sharp knife on top to create a decorative look.
Sprinkle with sea salt.
Bake for 15 to 20 minutes until the desired color is obtained.
