Ingredients (4 servings):
750 g of broccoli
1 teaspoon turmeric
1 onion
1.4 liters chicken stock
Preparation:
Peel and slice the onion.
In a saucepan, fry the onion for 5 minutes in a tablespoon of oil.
Pour the broth over the onion and bring to the boil.
Meanwhile, clean the broccoli. Detach the bouquets, then slice the stem into small pieces, remove the hard parts.
When the broth is boiling, add the stem into the pan. Add the turmeric. Cover, bring to boil and simmer 15 minutes.
Add the florets, cover again and simmer 10 minutes.
Remove from heat.
Mix soup, salt and pepper and serve hot!
