Ingredients (for 6 persons):
3 Cups of Cooked Chickpeas
1 1/2 Cups Chopped Cherry Tomatoes
1/4 Cup of Finely Chopped Parsley
1 Medium Onion, Peeled & Chopped
2 Tablespoons of Red Wine Vinegar
2 Cloves of Garlic, Peeled & Minced
Salt & Pepper
6 Tablespoons of Extra Virgin Olive Oil
Preparation:
Mix all the ingredients together in a large bowl and toss.
Taste, and adjust seasonings as needed.
Store in the refrigerator until needed.
