Wiener Kaiserschmarrn

Ingredients (4 persons):

4 eggs
200 g flour
300 ml milk
30 g raisins
1 pinch of salt
30 g sugar
40 g butter
Powdered sugar for sprinkling

 

Preparation:

In a bowl, combine flour, sugar, salt and egg yolk with the milk, mix to a smooth, thick batter.

In another bowl, beat egg whites to a stiff snow and then fold into the thick batter.

Put the butter in a large, shallow pan, and let it melt.

Pour in the batter slowly add the raisins on the top and bake on low heat until the bottom of the Kaiserschmarrn is brown. Turn it over and let it bake on the other side. When both sides are brown, tear up the finished dough with two forks into irregular pieces.

Serve on plates, sprinkled with sugar and serve with any plum compote or apple sauce.
