Lentils with sausages

Ingredients (for 6 servings):

500 g lentils
2 onions
1 carrot
200 g bacon
1 tbsp of butter
1 tbsp of flour
2 tbsp of mustard
1 clove
1 bouquet garni (parsley, thyme)
1 bay leaf
salt
pepper
6 Italian sausages

 

Preparation:

Wash the lentils.
Cook them in cold water with 1 onion stuck with cloves, the bay leaf, the bouquet garni and the carrots cut in small dices.
Cook on low fire from 20 minutes to 1 hour. Check the cooking regularly and add some water if necessary.
Add salt after 20 minutes.
Fry the bacon.
Chop the remaining onion and fry it in the butter. Add a bowl of broth from cooking the lentils.
Add pepper. Add the bacon. Add the mustard.
Drain the lentils and cover with sauce. Add some corn starch if necessary.
Fry the sausage in a pan and eat them with the lentils.
